APRICOT-CAKE ON THE WEBBER GRILL

INGREDIENTS

4 eggs

120 gr sugar
-
1 tsp vanilla essence
-
½ lemon, skin only
-
120ml milk (room temperature)
-
100gr melted butter
-
320gr self raising flour
-
Ca. 700 gr apricot halves (fresh or tin)
INSTRUCTIONS

Mix together in a bowl using a whisk eggs, sugar, vanilla essence and lemon skin until it gets light in colour.

Gradually add milk and butter into the mix.

Now gradually add the flour to the mix.Set the BBQ up for indirect cooking oven to 200C.

Scrape the cake dough out of the bowl into a baking dish (25 x 25cm).

Now scatter the apricot halves over the dough and slightly press it into the dough.

Bake it for 35-40 minutes on the Weber BBQ set up for indirect heating by medium heat. Make sure to check in between.
